Pineapple Marinade

What an amazing week this has been! I wish I could bottle it up and use it again another day. The weather has been great. That has meant lots of play time outside with the boys. And since the weather promises to be great outside this weekend too, I think that calls for a picnic on Sunday. With that in mind, I have been planning for the picnic. On the menu is chicken drumsticks.
I wanted to come up with a marinade with pineapple. My son is a huge fan of pineapple. So I purchased sliced pineapple from Costco and set about making a marinade. I based the recipe on a pineapple-jalapeno salad I had made a while back based on a recipe by Bobby Flay.

Ingredients:


  1. 10 chicken drumsticks – skin removed
  2. 2-3 slices of Pineapples (Vertical sliced – purchased from Costco.)
  3. 2 jalapeno or serrano peppers (slit in half and seeds removed) (You can add more peppers or keep the seeds in if you like a spicy marinade)
  4. 2.5 tbsp of chopped Cilantro
  5. Juice of 1 lime
  6. 3 tbsp Olive oil
  7. 1.5 tsp ginger – garlic paste (or add small quantities of fresh ginger and garlic)
  8. salt to taste

Blend the ingredients 2-7 above in a food processor until you get a
a nice smooth marinade. Even though the marinade looks green, the flavor is that of spiced pineapple. If you like pineapple, you will love this marinade.

Add salt to taste and pour over the chicken drumsticks. Make sure all the drumsticks are coated well. Pop this into the refrigerator and let it marinate for at least 12-24 hours before cooking the drumsticks!
To bake or to broil or to pan fry? Or to do little of each? Or maybe grill outside? I haven’t decided any of this yet. I will let you guys know the how the picnic goes, what the menu ended up being and share some pictures!
